Low Fat Fish Pie

This is my recipe for a first try at a low fat fish pie. Cobbled together by looking up a few other recipes and then going my own way. It was pretty tasty!

Ingredients:
150 grams prawns
320 grams mixed fish (salmon, cod, smoked haddock)
300 ml skim milk
teaspoon cinnamon
teaspoon coriander
pinch of salt and pepper
parsley
spinach
flour to thicken (ideally corn flour - had none so I used some wholemeal flour)
2-3 medium sweet potato (need enough to cover top of your baking dish)
100g low fat soft/cream cheese (I used an onion and chives flavoured  soft cheese)
1/2 cup low fat grated cheese
lemon
lime

Method:
pre heat oven to 180
chop sweet potato into slices and boil until soft
poach fish in the milk
add spices and chopped parsley
stir in cream cheese
add a few handfuls of spinach and reduce
stir in 1/4 cup grated cheese
stir in some flour little at a time to thicken
when happy with consistency pour into small/medium baking dish
top with the slices of sweet potato and a very light sprinkle of grated cheese
squeeze over some lemon and lime juice
bake at 180 for approx. 30 minutes
remove from oven and leave to rest for 10 minutes before serving
